Vinegar has been used for centuries for various purposes, whether to clean the house, sanitize or to make delicious pickled vegetables. For health, however, apple cider vinegar (ACV) is the best.
The Father of Medicine, Hippocrates (c. 420 BC), used ACV for different health ailments like coughs and colds. Now, it is being used to help alleviate hiccups, as well as help with health concerns surrounding diabetes, cancer, heart problems, weight issues and high cholesterol.
What makes ACV so healing to the body is that it is made from apples. When apples undergo the fermentation process, the result is beneficial enzymes and other life-sustaining nutrients. Apple cider vinegar is one of the only vinegars that contains a “mother”, a cobweb-like amino acid-based substance that is only found in unprocessed and unfiltered ACV’s. Groups that took in at least 1 tablespoon of vinegar a day had significantly lower body weight, BMI, visceral fat, waist circumference and serum triglyceride levels than the placebo group.

I have personally used ACV to treat symptoms of a nut allergy I had this previous year in Costa Rica.

1. Make sure the brand you are buying is organic, unpasteurized (aka. raw), and unfiltered. You want ACV with the “mother” – any vinegar that is clear and not murky will not produce the same bodily effects.
2. You don’t just want to drink ACV straight. Mix 1 tbsp. of ACV with 1 cup water. You can also add a little bit of honey if you’d like to help cut the bitterness.
3. Don’t want to drink ACV? Add it to your salads or other veggie dishes. Any way to get it into your body is great. A simple ACV salad dressing is 1 minced garlic clove, 1 tbsp. dijon mustard, 1/4 cup raw apple cider vinegar, 2 tbsp. fresh lemon juice, 2 tsp. raw honey, 1/3 cup extra-virgin olive oil (or room-temp coconut oil) and some salt and pepper to taste. Put in a small mason jar and shake until well combined.
