These people claim to be able to go days, or even weeks without eating (except coffee and electrolytes), and also even claim to be able to workout, and claim that they somehow magically also don't lose muscle (despite not getting essential amino acids regularly).

They claim that fasting somehow prevents muscle loss in ways that just reducing caloric intake doesn't, that your body recognizes and treats the fasting state differently.
Of course you have no pool of essential amino acids to draw from besides muscle, so if you're not eating protein, I'm not sure how your body avoids breaking down muscle to get those aminos.

I'm not that anon, and I'm not sure of this, but I was doing TRF IF (20/4), and quit after a bad lipid panel (high LDL). I wasn't doing keto, but I also wasn't doing low-fat. I'm not sure if fasting fucks your cholesterol #s up, but there's anecdotal evidence that it does. I completely stopped fasting after that.

You need about 60g a day to convert to fuel that the brain uses. The body also uses the damaged proteins circulating in your blood and lymph first. Muslce loss only starts after 2/3 days. You still grow nails and hair.

if you can fast for weeks it means you are a fat ass because if you don't need to lose dozens of pounds or something you won't need to do it
as for not losing muscle again that goes back to how much fat you need to lose
also people have all kinds of weird bodies and ways of handling fat like my cousin weighs 120 pounds and is 6'2 and can't gain weight at all no matter what where I can gain 5 pounds overnight by breathing air
He's not eating that much. Before lifting I was always skinny at 6'2" but people would see me binge eat one large meal and assume I eat like that constantly. Metabolism plays a role but if he tracked calories correctly he's just not eating a lot or works a very physical job.

I just started a 3-day fast because I binged yesterday and ate almost 5000 calories. Normally I'm on a 1500 calorie diet and weigh 60kg (132lbs).
keto & fasting is good if your fat or insulin resistant. Once you fix those then you be like everyone else and focus on healthy normal diet and exercise

Keto and fasting are fine if you have a lot of weight to lose or need to reset your insulin resistance. They aren't silver bullets though. You'll do better on your lifts with some carbs. You can go harder if your muscles are fully charged with glycogen.
The problem is that most people yoyo diet because they go right back to eating lots of bullshit. Ideally you would shift from keto to a healthier whole food diet that includes some grains, fruits and vegiabltes. A lot of people on keto dont do that. They get the weight off, then go back to eating lots of pizza, fried foods, grabbing candy bars and sodas at the vending machine and when they buy gas. But hey, I get it. They put candy by the check out. Frozen pizzas are at the front of the grocery store. Walmart even puts fried chicken up front at the registers.
