Is Bacon really that bad for you? There's some at the store, 3 pounds ends and pieces for like 6 bucks, to me it looks like a cheap source of easy, tasty protein and fat is basically just a fuel source. I'm told it's all the nitrates that are bad, which I read the ingredients and it did have nitrates and soem sodium something or other, but if I just eat it in moderation I'll be fine right?

      If there are nitrates in deli bacon isn't it safe to assume most meats come with nitrates? When I worked at a grocery store the butcher told me that all meats sold at grocery stores have some kind of preservative sprayed on it before being shipped to the store

        Butcher here. Nitrates are definitely not put in all meats. Nitrates are curing salts. They completely change the meat. Generally ready to eat meats have them. Bacon, ham, corned beef, pastrami, salami, pepperoni. Raw meats don't. If you cook it yourself and its not ham or bacon, there's no nitrates. You can tell if theres nitrates because they give the meat a pink color and chewy texture. And not all lunch meats have them. Turkey, chicken, and roast beef don't. Nothing is sprayed with preservatives, although some meat is packed in "modified atmosphere" where its vacuum sealed after being exposed to nitrogen or other gasses. This does prevent oxidation and browning but the meat loses some flavor. That's not really preservatives though. Also, since I see this all the time, there's no such thing as nitrate free ham or bacon despite marketing. Any package that says that has fine print "except that occurring in celery". They pump it full of celery extract that is super high in nitrates.

    There are numerous studies showing bacon to be a (mild) carcinogen. It also has terrible macros.
    I still eat bacon but I don’t eat a ton of it, mainly just using it for faux-carbonara and faux-pancetta for stuff like bolognese
