I issue with the MCT oil / butter in coffee is that I can never get the emulsion to stay. And so I end up drinking coffee that has this layer of vaguely coffee flavored grease sitting on top of it. I'm wondering if I use a metal filter or something less fine than a typical coffee filter would be better. Then there'd be more coffee sediment in the mix to act as a binding agent to create a sort of pickering emulsion.

That definitely would have helped too, but coconut oil was attempted to be used for fattening livestock except it had the opposite effect, the animals metabolism ramped up significantly and they also became more active and ended up leaner instead of fatter. So they use basedbean oil instead.
MCT oil and coconut oil have been found to cause the liver to directly produce ketones, which are used as fuel for the body. These ketones are synthesized from bodyfat, and the only 2 ways to enter ketosis naturally in order to synthesize these ketone bodies are fasting and low insulin response. IF combined with this would work like a boost and many people use these oils with IF for this express purpose, although MCT oil has been found to be more effective
