moron. The foods with lower GI isn't because of the complex carbs, it's because of fibre, protein content, etc, which slows down digestion.
White rice is all complex carbs yet has a GI of 72, compared to GI of 50 with brown rice. It's not the complex carbs changing the glycemic index, it's other properties of the food.

              Anonymous

Complex carb means starch, which is multiple glucose molecules chained together. Your body has to breakdown the links between the glucose molecules to absorb them. This slows the absorption.

                Anonymous

Yes moron. White rice is starch, yet white rice has a higher GI than most fruits which consist of simple sugars. The white rice has a higher GI than the fruits despite being composed of complex carbs because the fruits have fibre which slows down digestion.
The glycemic index has almost nothing to do with the form of carbohydrates in the food, and everything to do with all the other properties of the food - particle size, fibre content, protein type + content, cooking method, etc.

                Anonymous

                >Your body has to breakdown the links between the glucose molecules to absorb them. This slows the absorption.
This starts happening as soon as the food enters your mouth. That is what salivary amylase is for. Glucose begins absorbing into your blood stream as soon as you start chewing starchy food, because it can permeate the skin of your mouth to enter the bloodstream directly.

It is still one factor that slows the absorption of the glucose. Fiber reducing it further doesn't change that. Foods composed of starch and fiber are going to absorb the slowest, and slower than foods with fiber and simple sugars.

                Anonymous

                >Foods composed of starch and fiber are going to absorb the slowest, and slower than foods with fiber and simple sugars.
Brown rice is starch + fibre and has a GI of 50.
That's a higher GI than Cherry juice, orange juice, pineapple juice, etc, which are all simple sugar with no fibre.

Then those numbers are clearly incorrect. If you genuinely believe that brown rice absorbs faster than fruit juice idk what to tell you other than don't operate vehicles while drinking alcohol. Omegalul

Lmao dude those are the numbers. Carb structure is not as important as carb TYPE.
Starch is chains of glucose molecules.
Fruits contain varying ratios of fructose : glucose. Fructose is not glucose - it must be converted to glucose by the liver before it can affect your blood glucose levels.

Ah, yep. The difference between fructose and glucose actually escaped me here. You are right there.

So you agree that table sugar is not equivalent to sugar from fruit, fruit juice, brown rice, etc.

                Anonymous

No, but it's equivalent to white rice, a complex carbohydrate, and equal to whole fruits like raisins and waternelon. I think I have satisfactorily demonstrated that refined sugar is not inherently worse than whole food sources or complex carbs.
I never said it was "equivalent", I said

Complex carbs are digested almost instantly. They spike blood sugar almost as quickly as refined sugar.

I see the point you're trying to make, but it's flawed. Refined table sugar is a medium glycemic index food. If you wanted to say that carbohydrates were bad or complex carbs are just plain sugar or whatever convoluted point you're trying to make, then you would compare them to white bread, which has almost double the glycemic index of refined sugar.

You are missing the point ENTIRELY
Yes, there are other foods with carbohydrate which have lower GI. But they have lower GI because of other factors, mainly fibre, fat & protein content, or else the cooking method (compared boiled potato vs raw potato)

The point is that simple carbohydrates do not have fat, fiber, and protein all binding up the sugar in their matrix.

There is literally nothing wrong with refined sugar if you're metabolically healthy. If you're a diseased T2D / prediabetic overweight sedentary low-muscle-mass slob then yeah you should probably avoid sugar.

Refined sugar is a high glycemic food which means it causes a sharp insulin spike due to rapid absorption into the blood. We are not evolved for the glycemic load of refined sugar and it leads to insulin resistance.

In layman's terms refined sugar is how you get diabetes in the first place.

                Anonymous

There is nothing wrong with having a spike in insulin if your body responds appropriately. The problem is when your body no longer responds to insulin.
I am athletic and active, so when I consume sugar and spike my insulin, my cells respond appropriately and absorb the extra sugar from my bloodstream.
                >refined sugar is how you get diabetes in the first place.
                Nonsense.

                Anonymous

In the case of refined sugar, "cells responding appropriately" means a supraphysiological spike in insulin that is higher than we are evolved to experience. An insulin spike you get from refined sugar is like a paper cut that cumulatively results in the gash that is insulin resistance.

I see an awful lot of assertions with no evidence.
Our distant ancestors evolved on a diet of almost entirely fruit. I'm in my late 30s and I am still not diabetic after nearly 4 decades of consuming refined sugars ad libitum.
Because I am ACTIVE and ATHLETIC.

Sugar doesn't cause diabetes, sedentarism does.

No one who posts shit like this has ever had just a single donut at a time in their adult life.

It's not about what you eat, it's about how much of it you consume. I don't eat sugar at all, but I'm struggling with weight because I keep shoving my face with anything chewable

Make it easy to be healthy. Keep a stack of canned vegetables and spices by your desk and just snack on them when you get cravings. Make all your meals half green, and stuff yourself every mealtime with veggies. Experiment with recipes, frying veggies, grilling veggies. You cannot get fat on spinach, you lack the 4 stomachs for it.

Dump all your soda down the drain right now, it's making you hungrier.

if you're poor you should probably not intentionally increase your size and thus the amount of food you'll have to eat until you are more financially secure

I would be dizzy and nauseous from the blood sugar spike about 20 minutes after eating this.

Could the people who chose right really only have one donut, though? I feel they'd quickly talk themselves into a tall glass of sugary coffee and two donuts at minimum and no fruit. Maybe a breakfast sandwich, too, since they're having so much sweet. Seems like a slippery slope. I'd do it very rarely, if I were you.
