      is actually really isn't. Heat is the vibration rate of the molecules of the object. Water just happens to be ubiquitous in food. As the water molecules vibrate and heat up they transfer the heat to the rest of the food.

        yea they heat up the food in a way that is different then cooking it conventionally.

        when i eat microwaved food it literally tastes bitter and less nutritious, the texture feels like the tissue has been broken down ubiquitiously through out the food.

        with cooking food you get a depth of texture variety.

        Also, we know that over cooking food breaks down nutrition and is carcinogenic, so like wise, the mechanism by which microwaves heat food, which is vibrating the molecules of water through out the food, could also break down nutrients and be carcinogenic.
