I want to do these or at the very least zercher squats but it annoys the hell out of my when I do it. A pillow seems too volumous to help without getting in the way. Am I just a bitch or do any of you have any helpful tips?
Usually a week, try to keep your arms at shoulder width apart and also you can try to get the bar really deep in the elbows and keep it close to the body as much as you can.
In all honesty it's not worth the hassle. The bicep and tendon stress is bound to cost you training quota that could otherwise be put to much better use regardless of your goal.
Are you training this once for the whole week? You can do zercher squats for generalized overall strength conditioning. Otherwise just include front squats in your schedule, there's a learning curve but they're much more efficient and easy to incorporate in your routine.

Been doing zercher squats lately and I get elbow pain every time I do them, how long does it take for my arms to get used to holding the weight?

I hit 330 lbs for a triple recently @200lbs bodyweight. Is that good?
Just do front squats. Holding the bar like that is dumb.
