what is so bad about PUFAs?

saturated and trans fats give you heart disease and increase cholesterol in blood
unsaturated fats can lower heart disease risk and lower cholesterol in blood

yet see people talk about PUFAs like its drinking pure shit in golden oily form and even tiny amounts are terrible

am I missing something?

    it's mostly the rancidity in seed oils, because they're heat treated, then you heat them again, huge oxidisation

      Most fats are good (all in moderation)
      But when seed oils are heated they become toxic in some way, causing health problems. (things like fried food)
      natural sources of PUFA's are not bad, things like nuts, seeds and some meats (fish, chicken)
      Thats what I have learned so far and what I tend to follow in my diet

      Plus saturated fats don't do that. High LDL is a symptom not a cause. Oxidized PUFAs are toxic and the reason for the rise in heart disease.

        This has failed every single experimental test. Billions of dollars have spent on RCTs that tried proving this and they nearly all failed. The medical literature is replete with review papers over the past decade acknowledging this fact.

      Polyunsaturated fats - Fats missing many hydrogen atoms which means they can react with hydrogen atoms ( usually from H2O, very prevelant in the blood ) which creates free oxygen atoms that harm the body immensely leading to many health problems

      Saturated fats - Fats missing no hydrogen atoms and are stable, used as the primary method of storing energy in every mammal due to this stability

      Increased omega 6 regardless of omega 3 improved heart health when substituted for sat fat.

      Does it really matter? Multiple highly controlled RCTs have shown serious negative effects (higher mortality and or cancer rate). That's enough for me to avoid them as much as I reasonably can, the specifics don't matter

      I'm a biochemist working on cardiomyopathy. I would avoid seed oils as theyre calorie dense but they are definitely healthier than sat fat

        You're wrong though. Try reading more than the abstracts next time. Also you can't substitute one type of fat for another in epidemiological studies. Researchers do say that, but it's post-hoc statistical frickery. Similarly worthless as results obtained through p-hacking.

            People aren't mice and there are a lot of good reasons to assume that we've diverged and evolved to eat very differently from commonly used lab animals. You should also read the Methods section of those studies. They don't use normal food, they use highly processed flour, oils, and supplements. Yogurt isn't the same as flour, palm oil, and söy protein even though the macros are the same.

            To laymen (and I think researchers are also affected by this), it implies that the study says that when people substitute one type of fat for another, they become healthier. But in actuality, the people in the study who ate certain types of fats ate them as part of a whole diet (and lifestyle, etc). Only by changing your entire diet, lifestyle, environment, and perhaps genetics, could you do a comparison that's not confounded by these important variables. "Saturated fat is bad" is common knowledge among educated people, so they avoid it while maintaining overall healthier lifestyles. Also, epidemiological nutrition studies almost always use worthless food frequency questionnaires. People don't remember what they ate yesterday, yet multiple years worth of data is "collected".

    PUFAs are great if raw (fish, nuts...) but bad when used for frying or processed food because they turn into trans fats. It's really that simple.
    For wienering you should use saturated fat (butter, lard, coconut oil...) or monounsaturated fat (olive oil, avocado oil...)
