Not saying you need to double it, but experiment with adding in a couple more sets/exercises. The numbers Israetel gives are a range, not an exact guideline.
Doing that rn but a lot of what I do is still below his recommendations. I already take 2 hours to finish my 5-6 exercises aka 15-20 sets per session. I have no idea how people casually do way fucking more with the same intensity and proximity to failure.
If you want to get stronger, youre going to need to lower your volume actually. Try 3-5x5 on compound lifts that you want to improve, and dial it up a bit to 3x8-10 on the accessories. It's a bit of a tradeoff between gaining musculature and getting stronger - they go hand in hand, but one takes precedent over the other.
You don't have to double your volume, just start increasing +1 by set, maybe +2-4 on your rep range, switch your lifts around (even inversing what you do in a day is enough, i.e. you do exercices ABC normally, change it to CBA.

Sounds like your volume is less than what you need. Have you looked at Renaissance Periodization's volume guidelines?
