I've been down the road and back at the gym. Anytime I work out to much, my pectoral muscles swell up, so I try to avoid certain exercises to prevent the feeling of having b***h breasts. I've basically given up on gym life, altogether due to this.
I see men in movies with these perfectly cubical, muscular chests, and it makes me wonder if they didn't undergo serious work under the knife to reach that point. Is it a matter of removing muscle tissue, it can't be just fat? Is there any hope? I sometimes think it's related to diet.

Well, it's just not normal to have muscles that look like cow breasts on a man. I would figure that it has to be hormonal or something. There are square specs and then there are men with b***h breasts in denial about it.
I'm going for this kind of look, but nobody has shown me the way. I don't feel like forking over $4k in surgeries, to do it. What's the secret?
If your upper pecs aren't big enough you'll have unaesthetic pecs. Just focus 100% on incline bench, overhead press and flies targeting the upper pecs. Ignore all other chest exercises that target the whole chest equally or focus on lower chest.
They push out like triangles, no matter what i do. I've gone otter mode essentially, to stave off the shame and embarrassment.

I eat a lot of fast food. Between you and me, I've tried going beaner mode and that helps. Thank you, though. I see these men with square ones and I get self conscious, but I will either work out or go full bear mode. I've never seen a man with square pecs in person though.

yes, though some people have different clavicle shapes and chest muscle insertions (shapes). This will change the look of your chest but it wont make give 'b***h breasts' look ever, b***h breasts are entirely fat.

But what I'm getting st, and I'm not trolling, is that the muscle feels like twin peaks poking out my chest. I don't have that cool plateau feeling of specs that I see these guys in the movies with. My muscle tissue feels literally different than what I have witnessed in other people's body. Assuming we are all anatomically similar creatures with the movie men, this seems like an anomaly.
That crevice under the clavicle is because of the clavicle shape and muscle insertions, as in the gap is the tendon connecting to the chest muscle (tendons don't grow like muscle does obviously). Everyone has a tendon there, some people have longer tendons. Anyway most people would consider a full chest to more attractive, like Arnold Schwarzenegger's chest.
That being said, this is a stupid thing to fuss over, from the photos you posted your bodyfat and potentially a lack of muscle is the problem, not whatever you think is a problem that really isn't.
