2 cups is 320 calories. It's easy to add a large glass to every meal with another glass between meals. That's 1600 calories a day with pretty good macros.

For some of us like you and me if you want to gain muscle there will be times where it feels like you want to puke. Are you trying to hit 800 kcal eating salad? Try some calorie-dense foods. A largeish burger alone is > 800 kcal.
