    butter, sour cream (preferably mixed with fresh chives) cheese (whatever works) chili over top is good, or scoop out the potato meat, mix with sour cream butter chive and cheese and some vegeta seasoning (and bacon bits if you please) and make twice baked potatoes

    Meat chilis, sometimes with beans, always with cheese-Red chili, green chili, white chili
    Fried eggs with soft yolk, sauteed spinach, different vinaigrettes instead of or in addition to sour cream or unflavored yogurt deens, tuna, chives, parsley (only fresh), lemon juice, pickles, beets, onion, pico de gallo, roasted poblano chopped up

    Going to stop now, but anything you've ever had with potato as a side can be added to a baked potato

    Scrub off the dirty areas with cold water, cover it in a little olive oil, salt, and pepper, then bake for an hour at 400°F. If I'm not doing dairy I'll put on Valentina or some other such hot sauce, otherwise I'll do a little sour cream and some more pepper. Of course, I eat the skin as well as the flesh.

    I don't, I just boil them whole they end up less grainy and dry. Need less condiments. But usually just salt, pepper, butter if I'm low on fat.
