Really depends on you, obv your arms are resting when you work legs and vice versa. So it's more about how you want to distribute the lifts you want to do. There are people that do 3 full body workouts and rest 4 days, personally i find this harder because you have to do all that volume in one day and it tanks your CNS. whereas working out 6 days a week means you can do easier/shorter workouts and your cns should be fine 24 hours later. that said 1-2 full days off a week is not a bad idea but its more about managing volume.

Rest is the most important thing in muscle building. You can get away with a sub optimal training program, you can't get away with sub optimal rest, at least for a long time.
You do not need to reach doms to build muscle. And no, you can get doms even if you do workout often, and it's a sign that you've pushed yourself too hard.

the research says between 0-3 reps until failure will stimulate a muscle building response.
doms mean almost nothing, if you're too sore to workout then rest but it doesn't mean you did anything wrong or right and they will 90% disappear after 2 weeks working out

as for thread, i just listen to body. if i overdo it, i rest until i feel up to it again, but i usually do everything 2 times a week and rest on the days im still sore until im ready to go again
I workout 7 days a week. I have a bare minimum amount of exertion that needs to be accomplished until I "feel better" about myself. 500 crunches, 200 dragon flags, 150 bench dips, 150, bicep curls (35lbs weights) and 150 reverse pulls for tris. If I don't do these exercises at least every day I feel unaccomplished and disgusting. It's a mental thing more than a physical thing. I don't feel muscle fatigue from doing that 7 days a week. IMO that's a very light amount of work and the bare minimum to maintain without overdoing it.
I used to workput 6 days a week and barely saw any gains, then thanks to work and studies I was forced to switch to a 3 day PPL routine and my gains have been much better

youre just starting, even if i max out Intensity I get minor doms in one or two muscles for a couple days

1 to 2 days if you are doing calisthenics 1 day between weight based training.
