I eat 3 on average. Usually just fried or scrambled. I keep it simple, low fat cottage cheese on top with a little salt, pepper, garlic. If I make potatoes I like to do a scramble with veggies, a little plain greek yogurt and hot sauce.
Three scrambled with breakfast, two or three raw in my shake, and usually another three or four soft boiled with lunch. Sometimes I'll have a couple pickled eggs but they're kind of a pain to make, not hard but it's annoying because it means shelling a shitload of eggs. You run out of pickled eggs quick too. Then there's whatever might get used in cooking.
My grandmother has a lot of chickens. It's a real blessing to be able to eat so many good quality eggs.
