There are plenty of different reasons why most gym-goers will never achieve this body and if they do it's usually just for a short period.
First off is the sacrifices needed. As you said, strict diets, no alcohol, working hard, etc.
It's understandable, most people are more focused on other things in life and fitness is just a hobby, enjoying life is really most important.
But also, I think alot of people just don't have the genetics for it. I've seen people going to the gym same time as me, almost everyday, year in and year out but nothing really happens.
Maybe most people CAN build muscle but it's just harder for some people and over a long period of time either they're just not able to put on more than x amount of mass or it's just not gonna be worth it for them

this. this is absolutely achievable in a year for many. not in starting out obese or emaciated of course. but if someone started to actually work on progressing something as simple as pushups starting out at maybe 5 by the end of a year they should be able to hit 30-50 if not more. think about how much their body will have changed from going from 5 to 50. it just takes actually pushing oneself and progressively increasing performance.
