First thing would be making sure he hasn't completely given up. If he has no hope for himself there isn't much I can do to help him.
Get bloodwork done so we can get a baseline. There's probably a lot we need to fix there and we can make adjustments to his routine. Cardio and stretching every morning and evening. Nothing intense just something like walking on am incline or a casual bike ride. When he gets more fit he can do things like running and jumprope. A beginner bodybuilding program 3 days per week with the cardio and stretching coming afterwards when its a lifting day. Clean up his diet so he's not living on bread and mountain dew. I just assume looking at him. He'd be eating a low calorie diet 6 days per week. After a while he'll have fucked up a few times and he'll be blaming himself for all of it. This is when you can start digging deeper psychologically to figure out why he let shit get this bad. Abusive family destroying his self esteem, feeling socially shunned all the time because of his hobbies, trauma from late virginity because he wasn't that assertive as a young man, getting raped as a boy by a stranger who snatched him from his yard, not learning how to make and keep friends so everyone leaves him from his perspective, it could be a lot of things. We can fix his issues and get his emotional health in the right and make his transformation so much easier for him and more likely to stay.
A passion that I'm looking to turn into a profession. I see so many broken people around me who are decent but can't get out of the horrible place they've put themselves. It really hurts seeing that happen when I'm fully capable of making the world a little better by getting these people broken by suffering on the right track.

The way to get through to a man like that isn't a simple "you need to eat less, it's not healthy." You need to word it in a way that pierces the emotional barrier that's he's put up for decades now. "There are nights where I'm so worried that I'm going to lose you because of your weight that it's all I'm thinking about." A deeper heart to heart is what someone like that needs to get out of their own head and realize their hurting their family and not just themselves. A man's man like him cares a lot about his family and less about himself. And you're right that he is struggling. The people who can keep themselves accountable but binge at the end of the day are fighting all day to keep themselves together, and when the end of the day comes, they don't have the energy to say no to their vices. It could be something traumatic from his past or it could be something less deeply engrained like him hating his line of work. It's a common issue people struggle with and it's something that he's going to have to solve for himself when things start getting harder
Best market for it is in Silicon Valley or equivalent tech hubs elsewhere in the world. There is no shortage of people who are physically, mentally and socially fucked up, and also have a highly paid tech job which means they can afford to pay for your services to unfuck their shit
I'll have to look into if there's already a lot of competition in that market, but that sounds like a good place to start. Already tried the emotional stuff. I’m pretty sure he has bad conscience for it, but I don’t think he can make it on his own. I’ve tried everything. I’ve said it to him in a calm way. Angry way. Emotional, careful, motivating, etc. Whole family is more or less entry level fit now (I can bench about 2pl8) and I think it inspires him, he just doesn’t have the discipline. Speculating he has ADHD which is correlated with binge-eating as well.

Do it! The world needs more hands on positive training like this! Seems like you would need to be a physical trainer, dietitian and psychologist though. More power to you if you have the mental fortitude to listen to people complain all day. I'm not terribly fit, but I take responsibility for my actions or lack thereof. I'd put a fucking bullet through my head if my full time job was to listen to people complain and actively side step solutions to their problems.
