I barely spend any money. My mortgage is 1200, my property taxes and HOA and utilities add up to 800. I transfer that I to my account for my mortgage every month. My food bill is 500 a month. The rest I saved to 15k now I'm just investing the leftover money.
I live in California so I could work fast food and make 18 an hour and still just barely make it by with 2300 a month after tax just would have to cut my fold budget down which is easily doable. I work as a chemist. First I was making 3k a month after tax so 500 a month to savings. Then I was making 3500 a month so 1k to savings or investing. Now I'm making 7.2k a month so I can invest nearly 4k a month. Despite all this my wife still says I don't make enough. Don't get married.

It’s not normal to give your money to your mom when you work. If she complains, you can help her pay bills and keep the rest of the money. It is absolutely not right for her to waste your money, and you should absolutely not be giving her your money.

Chicken breast. Two bulk packages would run $25. Sack of onions, potatos, celery, mushrooms, peppers, tomatos run you $15. Pack of shells and egg noodles $5. Milk + cheeses = $10.
You can easily do it on one meal a day if creative with meals. Can probably get by with greek yoghurt + granola + berries/nuts and a pack of bananas too
