Potato has one of the highest glycemic indexes, and either way it is irrelevant because the more carbs you eat, the more glycemic load you take on. Whether it is refined or not only has an advantage in the sense that you are eating more fibre, which you could just do by eating fibre separately after eating the processed food, and still isn't enough to offset the carbs.
eating fiber separately does pretty much nothing to change the glycemic load of the carbs. and I highly doubt boiled potatoes without added fat have the same health effects as (white) bread or pasta which are almost always combined with added fat or sugar.

No, "overeating" isn't the problem. The problem is what causes overeating. Overeating is a symptom. If you eat a low carb diet, you actually don't want or need to eat more than you actually need, because you don't get the serious hunger desires you get on a high carb diet. When you eat lots of carbs, the exact opposite of what should happen does happen - you get HUNGRIER the next day or whatever. This is because hunger is fucked up by the insulin response from carbs.

Potato has one of the highest glycemic indexes, and either way it is irrelevant because the more carbs you eat, the more glycemic load you take on. Whether it is refined or not only has an advantage in the sense that you are eating more fibre, which you could just do by eating fibre separately after eating the processed food, and still isn't enough to offset the carbs.
eating fiber separately does pretty much nothing to change the glycemic load of the carbs. and I highly doubt boiled potatoes without added fat have the same health effects as (white) bread or pasta which are almost always combined with added fat or sugar.
White bread is water, white flour, yeast, and salt. If packaged, it has little bits of other stuff in it. White potato, which is not processed at all, has a higher GI. The whole "its only the processed carbs" is BS.
Glycemic index isn't the only relevant measure. Glycemic load and satiety are important as well. And even those don't capture the whole story since they don't fully explain how food affects long term insulin sensitivity, energy stability, and hunger.
