Is it possible to put on weight and correct lactose and gluten intolerance while on a vegetarian diet?
My gf is a sticc, she used to have an eating disorder when she was younger idk if it impacted gut absorption.
Imo she needs oats milk and greek yoghurt but she can't tolerate dairy even the fermented kind, she keeps chugging almond milk tho. The only carb source she can put up with is rice and potatoes but its so filling for her she eats like a bird.
Anaemia is also an issue, she's pale with baggy eyes and a waifish voice.
She has plenty of eggs but has sworn off meat because of ethical concerns. Any other decent iron recommendations? Should I sneak mince in her food?
Went from 63kg to 65kg in 3 weeks bros. goal is to get to 70kg or more at the end of the year, maybe aim for 75 next year.

lactose intolerance is genetic, nothing to do about that, just have her eat more fatty food, fish could be a good compromise, than full vegetarian.

No worries, Regarding tofu. Firm is best pan fried, medium is decent in soups ( like miso soup ) Firm Tofu is also incredibly high in protein and pretty calorically dense. Also, Oats is a low gluten grain, combine that with raisins( calorically dense ) apples, cinnamon, brown sugar. You know? Tasty.

Dates. Medjool( my fav ), or deglet noor dates. Delicious. Wildly high in calories for a very small amount of food. I don't allow myself to buy them, because i'd smash hundreds of calories in seconds.

almond milk is low calorie low protein. it's one of the worst alt-milks, especially if you buy it sweetened.
on my vegan diet i drink Orgain protein (onions/pea) dissolved into Silk unsweetened unflavored Onions Milk; two scoops and 8oz milk gets you something like 30g of protein right there.
if she needs more weight gain, peanut butter is key. high calorie, medium protein, and delicious. add to the protein shakes or eat with bread, oats, whatever.
other than that, eggs go great with rice for an easy meal, and potatoes+eggs can be the beginning of a great breakfast burrito.
