Sodium nitrite is a carcinogen and toxic in high levels. Sodium hydrochloride isn’t. That’s why the former is dyed pink so you don’t kill somebody. Normal sausage that you’re cooking and eating just gets NaCl and it’s just to taste, it’s a completely different process for salami etc and you use sodium nitrite that has to be precise
