Vegetables taste best when you cook them properly, and most of them also take some amount of prep work. That's already two hurdles too many for the average IST poster to surpass. The vast majority of people here have no cooking experience or are simply too lazy to cook anything more complicated than throwing some rice in a rice cooker or frying an egg. I don't know how people can live like that, but it doesn't effect me, so whatever. I just make a lot of stir frys, can just chop your veggies throw them in with whatever else you're cooking and boom. Also cucumbers salads are great flavor for insanely low effort
Cooked vegetables are tolerable at best and mostly vile, made edible solely by whatever stir fry or Italian sauce you mask them with. Fresh vegetables are where it's at, their only downside is that you can't meal prep a weeks worth of salad due to how quickly it spoils.
They taste fine without wasting all your time. Cut up some of these: tomatoes, cucumber, cabage, lettuce, radishes, onions, greens, scallions.... , add vinegar, salt and optionally white cheese and olive oil. Thats your salad, experiment and find veggie combinations you like. Roasted carrots, sweet potatoes are good as a side dish.
