      Vegetables taste best when you cook them properly, and most of them also take some amount of prep work. That's already two hurdles too many for the average IST poster to surpass. The vast majority of people here have no cooking experience or are simply too lazy to cook anything more complicated than throwing some rice in a rice cooker or frying an egg. I don't know how people can live like that, but it doesn't effect me, so whatever. For me, it's:
      >roasted brussels sprouts
      >pan fried asparagus
      >roast broccoli and cauliflower
      >any form of potato, if that even counts
      >all the carrots and celery I can manage to fit in my homemade chicken noodle soup
      >greens and beans with kale and arugula

        Cooked vegetables are tolerable at best and mostly vile, made edible solely by whatever stir fry or Italian sauce you mask them with. Fresh vegetables are where it's at, their only downside is that you can't meal prep a weeks worth of salad due to how quickly it spoils.

        They taste fine without wasting all your time. Cut up some of these: tomatoes, cucumber, cabage, lettuce, radishes, onions, greens, scallions.... , add vinegar, salt and optionally white cheese and olive oil. Thats your salad, experiment and find veggie combinations you like. Roasted carrots, sweet potatoes are good as a side dish.

        potatoes get a bad rep because most often people associate them with french fries
        they're actually not bad in terms of nutrition, they're a complex carb and do have micronutrients, the potassium and vitamin C content are pretty decent
        roasted potatoes or boiled potatoes are both delicious if properly salted and become heavenly with a drizzle of olive oil

    But considering that the food choices look so fricking bland, the micros can actually be balanced. Well, if you aren't afraid of your cholesterol skyrocketing.
