            Standard milk is 4.2% fat directly from the teat. Jersey milk is ~6%. "Whole" milk is 3-3.5% depending on the country. It's all semi-skimmed.

                Food engineer here, it's done for standardization and ease of processing.
                All milk is completely skimmed, then the cream is added back in at the standard concentration to make whole or semi-skim milk, which prevents different fat contents in the final product that can happen with different batches of milk.
                Also, homogenization is done to the cream only, instead of having to homogenize the entire volume.

                Maybe. You don't technically need to heat the milk to skim the cream. Unless you're buying it at a farm, in which case it's completely unprocessed save for chilling it, your best bet is to look at the fat percentage and hold it up against the kind of cow it came from. Being able to see the cream just means it's not been homogenized. Raw just means it hasn't been pasteurized, though I imagine anyone selling raw milk wouldn't then turn around and skim the cream.

      Calcification actually occurs when your diet is low in calcium and ample dietary calcium inhibits calcification of soft tissue and lowers calcium in the blood, it's called the calcium paradox.             Low pasteurization doesn't really impact flavor. The 2 biggest things, in order, are homogenization and fat content. Homogenization annihilates the flavor. Reducing the fat content just makes it proportionately less flavorful. High pasteurization and UHT both make the milk taste like burnt ass.

                I imagine the higher fat content of sheep's milk makes it tastier but I haven't tried it. I buy raw 6% jersey milk from a local farm and make my own dairy products with it. I can highly recommend it.

    if you get it raw straight from the farmer it has a very strong smell, but it's still delicious
    you lose some flavour when it gets pasteurized, but it's still much creamier
    try to at least get it non homogenized if you can't get it raw
    it forms fat clumps on top, and they taste like heaven

          As a man you're not even remotely close to saturating your estrogen receptors. The concentration of genistein and diadzein in ꜱoy "milk" is unnaturally high. Same with ꜱoylent which used to advertise 52mg of isoflavones per 414ml bottle or 125mg/l. In contrast there's 5.7pg/ml estrone and 0.9pg/ml estradiol, estrone being about 1/10th as potent as estradiol, in whole milk which adds up to about 1.5ng/l estradiol equivalent. At those concentrations, genistein and diadzein would have to be 100 million times less potent than estradiol to be equivalent between ꜱoylent and whole cows milk. For reference, estriol is the weakest human estrogen and it's about 1/100th as potent as estradiol, the strongest. Genistein and diadzein are presumably a fair bit weaker than that but not even remotely a million times weaker.
          In women the story is different. There anon is absolutely right in that it competes with estradiol for ER binding sites and causes a completely different kind of havoc. You can just google stories of women whose periods stopped from consuming excess amounts of ꜱoylent.
          The beans themselves don't contain nearly enough isoflavones to be a problem. It's when you process them to hell and back you come up with these unnaturally high concentrations.
