    Chuck roast is your new best friend, make sure to trim some of the outside fat (there's enough in the intramuscular tossue) and brown all the sides on the sear setting. Then pour a container of beef stock to cover part but not submerge and slow cook that b***h for 6-7 hours or put it on pressure cooker for less time (I braise mine in an oven so don't know times for instant pot).

    It'll provide you a base for meals for whatever the frick you want for the week since it's just beef flavored. Good meal prep option.

      Instant pot needs less liquid, like a cup (freeze the rest in 1 cup amounts to use for future roasts). The browning is highly questionable, I don't do it, it tastes the same and saves time but you do you. Times are 60 minutes manual, 15 minutes natural release. Not as good as slow cooked, but way faster and still good.

        Thanks for clarifying anon, was basing my shit off of dutch oven and braising. In terms of browning I like it because you'll get bits that have a nice crust/seared taste but not a requirement by any means

          It can help, of I was cooking for others I'd do it, but I'm not very picky and I'm lazy so... Also, unless you just really want the fat content, pork loin is less than half the price where I am and it's technically still red meat. Pork butt is fattier and the same price. Basically you'd be making carnitas instead of barbacoa.

        Just like a steak, the sear on a roast is an important part of the beefy flavor. I use a cheap map gas blowtorch. It’s super quick and easy.

      I'm sorry but this is terrible advice. Chuck toast becomes a tasteless chewy mess in a slowcooker. It's nowhere near pulled beef made on a barbecue. I'd instead say eat things like roast beef of minute steak which is also usually pretty cheap. And go for nice steaks when spicing it up.
