Another thing I miss horribly is having to focus so much on fricking food. use to be i'd just eat something and it would be done. since calisthenics is so fricking simple you really do not need a lot of protein.
Sadly it takes years for muscle mass to vanish. Even stimulating a muscle a little can keep a sizeable portion for a lot longer than people think.

It is. If you don't move AT ALL you will lose at average 8-10% of muscle mass per month. If you just turn from one side to another it's suficiant enough to reduce mass loss 90%.

You sacrifice more going over that weight in my opinion than you gain. You also do not gain as much athletic potential as you would think just tacking on more weight if you are well trained and sub 15% 215. The best fighters usually ended up being around that weight based on early ufc when weightclasses didn’t matter as well. That said, guys who are happy with 160 or something are ngmi.
