        Low pasteurized non-homogenized 3.5% jersey milk does not taste significantly different to 6% raw jersey milk. The main culprit in making even whole milk taste like skim is homogenization. It is the devil.

            Just stick with raw, it's good for you and you won't get sick from it. Because of the nature of its shelf life, raw milk has to come from small local farms, which are usually very trustworthy pillars of their communities who just want to provide the best product they can to the people around them. I actually trust raw milk from my farmer more than pasteurized milk from the grocery store.

          Saturated fat isn't bad for you. Some amount is necessary and beyond that it's just energy. It's the same story with all the conventionally bad foods. You want to study the effects of X, so you find a group of people who have elevated levels of X which invariably turns out to be hambeasts. You then compare them to the baseline (humans) and find that they are in ill health. Rinse and repeat.
          The unfortunate effect of demonizing fat, and especially saturated fat given that it's usually attached to a lot of protein, is that people replace it with simple carbohydrates that calorie for calorie provides far less satiety. That's why you see that particular correlation in kids all the time. Health conscious adults will ignore their increased hunger to a much larger degree than kids who don't know shit about food/milk/calories and just drink what their parents buy.
          Another unfortunate side effect of skimming the cream off of milk is that some of the hard-to-get good stuff like vitamin A, folic acid and selenium are all in the fat.

      With pasteurized milk? It depends, but not usually. But a lot of people actually report lactose intolerance subsiding after drinking 4-8 ounces of raw milk every day for 2-4 weeks. No promises for you individually, but the info is out there.

          I'd try a shorter ferment. More temperature control could help with keeping ferment times consistent, but the higher temperatures are going to make the bacteria more active and ferment faster.

      This is just not true. Calves can be sold or raised into new dairy cows, there is literally no reason to abort them. As for the "perpetually pregnant" thing, cows go in rounds and are given months of time to recover from all the milking before they're allowed to get pregnant again.

The farm where I buy my milk has calves in a separate pen with nothing but a fence separating them from their mothers and they can't even be assed to walk up to them. If you care you can also buy your milk from a farm where they don't separate them. You can even get it in the supermarket here now.

          There's nothing inherently hypocritical about eating meat, and there's nothing chad about enjoying or excusing the suffering of animals. Livestock can be treated well in life and given painless deaths. I do agree that factory farming on large scales often has some problems, but that's why I get my meat from local farms only where I know how the animals are treated because I've personally seen the whole operation.
