    Sausages often use nitrates as preservatives, and you wanna limit nitrate intake since it causes cancer.

    Sausages can be very good for you. They're a good way to eat some organ meats too since some people don't like the texture of things like hearts but enjoy the flavour in a sausage.
    I haven't tried it but I think replacing some of the meat of a usual recipe with heart meat and some of the fat with brain would be extremely nutritious and taste as good or better than normal.
    Higher in cholesterol if you care about that sort of thing though.
