Used to be eggs and chicken thighs with red meat once a week and some fish once or twice a week.

It's not the cheapest but cheapish: Pork chops and cutlets. In the US pork is relatively inexpensive relative to beef. It can take time to learn to cook them so they are tender and nicely seared. They are unforgiving and like rubber if overcooked.
I cheat usually: sous vide at 135 for 2hr to kill disease, let rest, sear for a few seconds on iron skillet (or outdoor grill if feeling fancy). I personally avoid acidic marinades with pork, gross texture in my opinion.
There are some good, easy Japanese dishes with pork, i.e., pan fried tonteki. Or just simple anglo-franco fare: pork chop with sauteed diced onion+ apple, and swiss chard mustard greens, or collard greens.
