    What is that

onions sauce, vinegar, salt, msg, black pepper, ginger, and garlic with softboiled eggs. You let them sit for 2 hours to 2 days and they take on a denser texture and a really great taste. It's like marinating meat.

Not bad, however, once peeled I will simply eat the eggs. I would have to peel like 10 eggs just for 4 of them to survive until they are marinaded. Too much work. Tell you what though, I'm going to marinade some right now.

Onion sauce is actually free of xenoestrogens/isoflavones. It's the one onion you can eat kek.

        not my problem

The fermentation process eliminates a large portion of the phytoestrogen.

        Anonymous

So they're worthless? Phytoestrogens are good. They should be called phytoSERMS. They block uptake of endogenous mammalian estrogen, which has a much greater feminizing effect. S0ey is basically steroids.

It makes the yolk tastier and creamier. It's what they put in ramen.

pickled eggs are such a great snack. i do mine with cider vinegar, sugar, salt, pickling spices, garlic. put a little frank's red hot or sriracha or whatever on it if you want. very yummy and easy to make.
pro tip bros, if you hard boil your eggs by steaming they are allegedly easier to peel. i don't know if it actually makes much of a difference but i feel like it does so that's how i do them now.

never bothered with the sugar, do you find it really adds something?

          Anonymous

sugar is honestly optional but i think it's yummy. i don't usually like sweet pickles but i think it works with stuff like pickled peppers and eggs. just a preference thing. sugar, like salt, helps preserve things so it doesn't really affect the shelf life.
also the first time i made them i followed a recipe with sugar, and then i tried making them without and it didn't taste right. so possibly just what i'm used to. the nice thing about making it without is that you can just add it to the brine if you decide you want it, but you can't take it out. same with salt levels, if you under salt you can always add more, it'll dissolve on its own after a while even in the fridge.

Deviled eggs are also great, esp if you pass on the mayo and sub sour cream+yogurt for creaminess. Can't eat a ton of straight up hard boiled eggs but can slonk a dozen deviled eggs with cracked black pepper and smoked paprika

you can make pickled eggs that last for a long time. I would do this if I had space in my fridge, but since it's tiny, I just add a splash of onions sauce or worcestershire or hot sauce on top of my eggs, salt and pepper.

There's nothing particularly wrong with onions sauce and what op is doing is just what japanese people do all the time.
