i'm not sure if rice is better than pasta but I find it easier to prep with. It's easy to cook extra and either freeze the leftovers or use it in other dishes like fried rice, casseroles, and soups/stews.
They don't know how to bake bread. Rice is easy, just put it in water and microwave it. Bread takes longer than 5 minutes to bake.

They're a staple in BODYBUILDING nutrition because (1) those guys need to consume massive amounts of food and (2) rice is cheap as shit and easy to force down your gullet without coming loaded with any weird goyslop poison. It's not that it's "heathy" in the way you're thinking, it's just not UNhealthy and you can eat it all day every day without going broke.
