    It depends on the brand. You want low sugar, low fat, highest protein possible, and especially high number of different probiotics.

    Something nice about kefir is if you drink half of it, you can add milk and grow it back again after a day sitting out in a warm place. You can also add super expensive probiotic pills like the ones with 60 billion in the kefir to make a way to grow your own expensive probiotics over and over again.

      Making your own matters more than whether or not you use pasteurized milk. Both contain bifidobacteria, which comes from the digestive tract and creates the beneficial enzymes that you would denature through pasteurization.
      The "kefir" you get in the store is pasteurized after fermentation to prevent further colonization, with different strains of bacteria added so that they can still market it as "live and active cultures." If you make your own, you'll know that it can get carbonated after a few days, which doesn't work well for large scale grocery distribution.

        This is false. Do you enjoy just making shit up on the internet? I've, many times, used that kefir I bought at the store to make more using milk I bought a section down the isle. Now it's not really fermented with kefir grains but is instead fermented with select probiotics. So it's more akin to yogurt than real kefir, but it does have live probiotics.
        Also look it up. You can find guides on how to do the same thing. The brand I used is lifeway.
