So you're saying heavy FAHVS are better for joints and getting proper form down pat? No, that's bullshit, and the program is way too leg-centric in the first place.
Program a split for him. 2 sets for every muscle group, maybe more sets for arms. If you insist on a full body routine, use the compounds in SS with lower weight, higher reps, and put some isolation work in there for his arms and traps, and I would HIGHLY recommend dumbbell variants over barbell.

I'm moronic, meant 2 exercises. Set and rep ranges are gonna depend, but imo 3x8-10 for long ROM exercises (such as squats) and 3x15-20 for short (calf raises, tricep pushdowns, ect.)

So other than eating more, what workout should he do if not SS? I'm going to pressure him to workout with me, but if he isn't seeing noticeable gains I think he's gonna quit so I don't think calethetics is the right choice.

How long does he think this takes? Definitely not a day, not even if you're pinning. Two weeks to a month at least, depends on how much test he makes and if he's eating clean and taking proper rests days when starting as a DYEL.
Look at Jeff Nippards beginner programs (just google jeff nippard fundamentals PDF and find it for free).

Tell you're friend to workout and don't stop for more than a day. It doesn't matter if he's only doing 5 pushups and 2 burpees a day. Simple calisthenics is better for people who just want to start w/o paying for a gym or equipment. He was to workout one day then rest one day for best results. Otherwise, just keep at it, the hunger will come once your body starts working more and you're at a serious caloric deficit.

Then start him on a basic PPL routine, very low set and rep so he doesn't get overwhelmed.
All this "BULK UP RIGHT NOW AND START LIFTING PB'S EVERY DAY" advice is pure fricking nonsense. You need to work him into it gently so he doesn't give up.

3 for the first 2 weeks, 6 from there on.
The variant would depend entirely on what equipments available, just google some different routines and see what's most likely to work for your mate, maybe he's too embaressed to go to the gym or something, I don't know.
As he starts to get close to the normal weight for his height, you can then start looking at specialised routines but you're looking at at least a few months before that.

Literally just eat at a caloric surplus--- and don't be coming on here complaining that it's too hard. Eat scoops of peanut butter throughout the day. Put whole milk or ice cream into your protein shakes or smoothies. Smoothies are a great place to get calories... if you're having trouble getting yourself to eat or with your appetite, make that shit liquid and chug it. For calories, add banana, protein, milk, peanut butter, or ice cream, and for nutrients add vegetables like kale or really whatever. Get yourself some dextrose--- not table sugar, which is 50% fructose. Get yourself pure dextrose and add it to your post workout whey drink. The human body cannot effectively utilize fructose, but dextrose (which is glucose) is very readily used.
