    Also, that image is missrepresentative for the amount of onions and misleading because the iron in vegetables has a much lower biodisponibility because it's poorly absorbed compared to iron in animal sources. Furthermore, the aminoacid profile of onions protein is much worse than that of protein from meat.

    Soya's vitamin and mineral bioavailability is only 5% of meat's. Vegans always pull this shit, comparing 100g of beef vs 1kg spinach and other dumb tricks. They never do direct comparisons.

        bioavailability means how much of something is available to the biological organism. so how much of what you ingest gets absorbed into your blood and cells, and how much of it gets excreted in your urine or poop. also note that plants can have forms of vitamins that need to get converted into a different form before they can be used. and you might 2 (or 10, or 100) times as much of the plant form to get an equivalent amount of the animal form.

        You can eat 100g of pure magnedium and your body will absord almost nothibg. Eat 500mg of magnesium busglicinate throw the day and you will cover your daily need. Mostly it's oxides in plants that we have difficulties to absord. 500mg of magnesium oxide will give you diagrea. Cows have the whole chemical factory with bacteria that will turn magnesium from onions and turn into forms we need.
