Chicken breast is drier so I think it's actually better at soaking up gravy, although tbf that's the flavour of the gravy not the chicken.
Sometimes you want drier meat to balance out your dish/sandwich/whatever of it would be too sloppy overall.

Chicken breast is delicious. Thighs taste funny. There's a million ways to make them. Teriyaki sauce, soi sauce. Do lemon juice and garlic. Maybe add butter to it, or simmer it in a wine sauce. Curry is good. Chicken curry and rice is fricking delicious. There's also just good ol salt and pepper. You could dehydrate it and make it into jerky. Cheap thighs have a strange texture, like whatever the water solution they put in doesnt work in the same way it does with breast. Expensive thighs, without any added water, are top tier but more expensive than cheap breast so only come out when im making a real meal.
