buy some kind of flat top griddle for your cooktop. Then buy the largest deepest stainless steel bowl you can find (typically used for mixing ingredients) and you can rest it on top of cooking food to create and oven type effect. Like what fry cooks do for burgers

I use a can of tuna instead and fry it up in a pan, wait 2 mins, spread tuna around so its flat & across the pan and then crack the eggs on top and make like a pancake. Same thing & tasty

Instant pot make god tier potatoes. Just cut a x shape in the middle of the potato and pressure cook for ~17 minutes with a little water in the bottom under the rack thing.
