Hunter here. I process my own meat since I don't trust people especially the fricker that gets paid 10$/hr during deer season not to skim some off the top when processing. I always take the heart. Its some good eatin'. Check out "The MeatEater" on youtube he has a heart (ticker) cooking special with some decent recipes. I have never consumed the deer ribs but I think I'm going to try this year. I just need a proper saw. I'm not sure where they sell cow heart near me other than going to the local farmers

My Sam's beef brisket is cheaper than ground beef plus it's less likely to be mystery meat. I do that and milk.

Lamb or veal heart ragu is one of he most delicious things I ever eaten. Grilled duck or chicken hearts are really good. Never had deer or cow heart, but I bet that you can make them delicious.

get it from a trusted source. local farmer, ask them about background, etc. it's not a lot more expensive, especially when they wanna get rid of something people arent as often willing to eat
