the only thing carnivore really has going agasinst it is excess iron, which will cause oxidative stress, but easily avoid by simply not eating red meat/organ meat every day.
I dont think carnivore is rational at all. Past "carnivore" cultures would have drunk milk and if they had chickens benefited from eggs as well. Why only meat? Most people that benefit from this diet have bad gut flora, but long term carnivore is not logical. Most cow mothers produce enough milk for their calves and a good surplus given good diet, enjoy that surplus or make cheese out of it for winter yknow?

diets aren't really "rational" , so long as what you eat meets dietary sufficiency it doesnt really matter. just like how eating nothing but bull testicles isnt going to appreciably improve your test levels, neither is some plant diet going to make you live to 110 years old.
