If you eat a low amount of a junk food, you will be skinny anyways. You can eat 1500 calories of twizzlers everyday and 500 calories of meat, but that doesn't make it a good diet.
Also, look up diabetes in Asia. It's far more prevalent than you would expect for a non-overweight population.

I got into the habit of eating a big bowl of white rice with my spicy chicken every other night. terrible idea, I gained 9lbs over the course of a few months. I cut it out of my diet and I lost a 16lbs. don't know how it works but that's what happened to me. I still crave some delicious rice to go along with a spicy bite of chicken but it's not worth it.

White rice is a low tier starch because there isn’t much protein or other nutrients in it. Potatoes, wheat based pastas or breads, quinoa, these are better options. Even oats although they have a similar problem aren’t as bad, and have fiber.
All that said, CICO still applies and no one said you have to get any nutrients but carbs from your carb source so with even a little effort put into what you eat rice is fine.

I was thinking a cup of white rice with veggies and chicken breast for dinner, seems fine to me. The most fattening thing would be the rice if anything, but if I only have a cup that's good portion control.
Carbs are obesogenic. It IS fattening, especially if it's white instead of brown rice, since it has no fiber and the starch is absorbed quicker.

Why not I do? It takes about two days to sprout a serving of rice, three if it's really cold. Easy to plan how many jars you need from there. It's not a complicated process. If you're totally inept some rice cookers even have a sprout setting.

Imo it tastes about the same, but I smoke and had covid multiple times. It might be a more noticeable difference for you. The texture is noticeably different. It's kind of creamy and a little bit chewier.

Rice is good for you but if you’re trying to cut it’s not very good. Very high calorie. Potato’s and yams are the cutting mans carbs.

Humans have only been eating polished white rice since the middle ages, not long enough for our biology to adapt to it.
It really depends what your goals are but I was able to achieve a CDC-approved weight loss of 2 lbs per week eating white rice for dinner every day. Of course my weight loss diet was something like 1500 calories a day with 500 calories per meal.
I'd say it's great for bulking but if you're trying to cut at all then eat something less calorie dense. Same for bread and pasta. Potatoes maybe are a better option for your carbs. They're like half as calorie dense as rice, and more nutritious.
