Dis dish be inspired by da Choctaw people an' der traditional cookin' techniques, an' it's sure ta be a hit wit seafood lovers an' anyone lookin' for a taste of da Bayou. >Whether ya enjoy it round da campfire or in da comfort of your own home, dis stew is sure ta satisfy your cravings for delicious an' comforting food.
    Ingredients:

    - 2 lb fresh mussels, scrubbed and debearded
    - 1 stick butter
    - 1 small onion, diced
    - 2 cloves garlic, minced
    - 1 jalapeno pepper, minced
    - 1 small summer squash, diced
    - 1 cup corn kernels (fresh or frozen)
    - 1 cup okra, sliced
    - 1 cup water or coconut milk
    - 1 tbsp Cajun seasoning
    - 1 lb frog legs
    - Salt and black pepper, to taste

    ## Instructions:

    1. In a large pot or Dutch oven, melt the butter over medium heat.
    2. Add the onion, garlic, and jalapeno pepper to the pot and sauté for 5 minutes, or until the vegetables are soft.
    3. Add the summer squash, corn, okra, water or coconut milk, Cajun seasoning, salt, and black pepper to the pot. Stir to combine and bring the mixture to a boil.
    4. If using frog legs, add them to the pot and stir to combine.
    5. Reduce the heat to a simmer and simmer the stew for about 20 minutes, or until the vegetables are tender and the frog legs are cooked through.
    6. Add the mussels to the pot and stir to combine.
    7. Simmer the stew for an additional 5-10 minutes, or until the mussels are cooked through and have opened.
    8. Serve the stew hot, garnished with chopped fresh herbs if desired. Enjoy!

      - 1-3 lbs chicken backs (use as many as you'd like, but at least 1 lb)
      - 1 large onion, diced
      - 1 bell pepper, diced
      - 4 jalapeno peppers, diced
      - 6 cloves garlic, minced
      - 2 lbs turnips, peeled and cubed
      - 6 cups chicken broth
      - 2 cups water
      - 2 cups grits
      - 2 tbsp butter
      - 4 tbsp Cajun blend spice
      - 1 cup radishes, thinly sliced
      - Salt and black pepper, to taste

      Instructions:

      1. If possible, roast the chicken backs over a fire until they are charred on the outside and cooked through. Alternatively, you can brown the chicken backs in a pan on the stove.
      - To char the chicken backs over a fire: Build a fire and let it burn down until you have a bed of hot coals. Place the chicken backs directly on the coals and cook for about 10-15 minutes, turning occasionally, until they are charred on the outside and cooked through.
      - To brown the chicken backs in a pan: Heat a drizzle of oil in a large pan over medium heat. Add the chicken backs and brown on all sides for about 5-7 minutes. Remove the chicken backs from the pan and set aside.
      2. In the same pan, add the onion, bell pepper, jalapeno peppers, and garlic. Sauté for 5 minutes, or until the vegetables are soft.
      3. Transfer the vegetables to a crock pot.
      4. Add the turnips to the crock pot and stir to combine
      5. Pour in the chicken broth and water, and stir to combine.
      6. Add the chicken backs to the crock pot.
      7. Cover the crock pot and cook on low heat for 6-8 hours, or until the turnips are tender.
      8. In a separate pot, bring 2 cups of water to a boil.
      9. Stir in the grits and cook for about 5-7 minutes, or until the grits are soft and have absorbed the water.
      10. Stir the cooked grits into the crock pot, along with the butter, Cajun blend spice, radishes, salt, and black pepper.
      11. Stir to combine and cook for an additional 30 minutes.
      12. Serve the stew hot, garnished with chopped fresh herbs
