    1 cup flour
    2 tbsp sugar
    2 tsp baking powder
    1/2 tsp salt
    2 tbsp butter melted
    1 egg
    1 cup milk
    1 tsp vanilla

here's the secret to perfect pancakes IST
don't add any spray or oil to the pan. if its non stick grease the pan and wipe off with a napkin till its cleaned off and leaves a thin layer of oil/butter

med high heat, pour small pancakes no bigger than 4 inch round.

fluffier pancakes whip up the egg white separated with yolk and fold into batter.

Assume I can switch to other sweeteners like stevia? What about flour, can I switch for protein powder?

sure, also i'm drunk so i meant to type *if its not a non stick. But i'm sure the stevia will taste like shit. try this recipe instead for waffles or pancakes with natural sugar.
Buy a krups grinder (under 20 dollars) and grab a half cup of oats, throw in 15g of coconut flakes, regular or sweetened. grind to a fine powder. set aside. grab 1 egg, 1 banana, 1 tsp of vanilla and 1/4 cup of milk (i use skim), blend in a blender or with a stick immersion blender to a smooth liquid, melt 1 tsp of coconut oil and mix into this liquid. Mix all ingredients together to form a batter, can be used for waffle makers or pancakes, just note that the batter will expand a lot and leak all over you waffle maker so pour conservatively.
this is my favorite recipe btw when i don't want to pig out.

macros for 1 big waffle or 3-5 pancakes:
        522 calories
        16.8g protein
        74g carbs
        (23g sugars)
        19g fat

I usually guzzle a half quart of milk mixed with instant coffee first thing when I get up. Then I typically make some rice with tuna or just eggs. Today I have no food ready to eat and I don't feel like cooking so I'm just gonna have a couple beers and then eat at work (free meals cuz boh restaurant worker picrel).
