Bread shouldn't last more than a day without going stale nor more than two days without growing mold. Huge red flag if your bread looks fine after a week.

Whole grain rye bread is God. And it ages well too. Old and dry white bread is just shit. Rye bread hardens just right and is a workout for your jaws.

this is true with moister bread like rye loaves but like a baguette will just become inedibly hard and stale.
