I've read sit-ups cause back issues and had fatigue with an brain/eye condition so I'm paranoid and very slow with them. However, they're always in military/martial arts regimens. I've also read they're not even the best exercises. Why are they used so much and done so fast?
PS: I want to decide on whether to do sit-ups or replace them with some of these to my routine. Which is the best substitute for them? I currently do leg-raises and russian twists, but some of the workouts here look more appealing:

In the navy. We don't even do situps anymore. We plank because it's more centered around discipline and you work out more muscles. Also different variants of planks add to this.

Pushups, situps, run. Bodyweight exercises don't require anything other than a body.

Planks are more functional for building the stamina needed to engage in long bouts of homosexual activity. That's why you did them, princess.

Whats the deal with sit ups?
Firstly, you aren't sitting when you start, you're lying down. Its the opposite of the movement name. That's like calling a deadlift a "put it back down on the floor".
Then, even when you're doing a sit up, you're not even seated! Just because you're on your ass doesn't mean that you're seated, ya know. Are there many people that actually decide "Ah, its time to relax, i better get into a comfortable position like a deformed, backwards cobra".
And finally when you actually do a sit-up, you don't stay up! You reach a certain point, and then back down for the brief 0.2 seconds of nap before you become someone who is just learning to sit again. Maybe that's why you only see fat and out of shape people doing sit-ups: any time they can do something lying down, they're all for it!

They are inefficient and will strain your lower back. You see them so often because they are a normie's idea of fitness, like the bench press
Pretty much any ab isolation would be more effective. Try them out and see what works for you. I like bicycles.
Frick off
I use hexagonal dumbbells to hold my feet to the ground during sit ups and I feel it more in my hips and inner and upper thighs than my abs.

No, your abs are too weak for the movement so you cheat.
How so? My feet stay on the ground, my reps are slow and controlled, back straightened, chest to knees and tension is kept so my back stays around an inch off the floor

You know why, same reason why this could happen with any exercise. If you're feeling muscles other than the ones you're trying to work out then you're obviously using those muscles to perform the movement.
Try to use your mind-muscle connection to actively concentrate your strength towards your core.
sit ups cause back issues because people do them wrong. Their abs are weak and they pull through their hip flexors. So essentially they're dangling their torso unsupported and pulling.
Try hunching your back while doing them, and voila your back pain is gun.
Do you have advice for doing them quickly? Is it even possible with said proper form?
