Butter if your diet puts you under 13-15g of saturated fat a day. Olive oil if it's over.

butter is never healthier than olive oil

They're both pretty benign. The only thing that could make one better or worse than the other is in the larger context of your diet.

butter is why germans get heart disease and italians don't

Germans also don't really eat much sea food. French eat butter and also tend to eat fish in the more costal regions. If there's anything to make an argument for the benefit or detriment of dietary fats it's a fish issue not a cooking fats one.

the french get alot of heart disease IIRC but their doctors don't mark it as heart disease

Yes I'm sure its not more complicated than that. I'm sure there are zero other factors

There is no evidence for restricting saturated fat

The saturated fat - LDL - heart disease chain is probably the single best documented phenomenon in modern nutrition. Ofc, it only applies to certain types of saturated fats. But nonetheless we have mendelian randomized trials on this stuff now. You simply cannot keep coping, it defies basic sense

It is the most consistently falsified hypothesis. Mendelian studies are not randomized and have various other issues

Mendelian randomization is just the name of a type of study https://en.m.wikipedia.org/wiki/Mendelian_randomization#:~:text=In%20this%20regard%20Mendelian%20randomization,is%20associated%20with%20the%20exposure

And it’s not the only evidence we have. Statin trials show a very clear relationship between LDL and CVD. I mention the Mendelian research on PCSK9 mutations because they show a very significant drop in CHD occurrence over a lifetime of low LDL https://www.nejm.org/doi/10.1056/NEJMoa054013?url_ver=Z39.88-2003&rfr_id=ori:rid:crossref.org&rfr_dat=cr_pub%20%200www.ncbi.nlm.nih.gov

They have more benefit the less they lower cholesterol. Also of note not a single station trial has showed mortality benefit since new clinical trial regulations made fraud more difficult in 2005 or so

You dont cook with olive oil, idiot. It's a fricking salad dressing, aka pretty fricking useless.

I'll say this as a Greek who fricking loves olive oil: use butter. Olive oil is good for you, but cooked olive oil? Not so much. Don't trust what le happy merchant says about olive oil. Use it as it is intended to (Greek salad dressing and whatnot)

        Is it yellow? It's shit.
Does it smell like olives? No? Then it's shit.
But to be fair, to get really good olive oil, you pay a lot no matter where you live.

We used to have an oil mill when I was a child, it was beautiful. Luv olive oil, luv butter but I can definitely overeat butter so I'll always pick olive oil for IST purposes.
