            Lactase persistence only matters if you're drinking heavily pasteurized and homogenized milk which destroys enzymes and beneficial bacteria and damages the fat and protein that normally helps encase the lactose and make it take longer to digest. Pasteurized homogenized milk is a lactose bomb for the gut, while raw milk releases lactose more slowly over time as your gut breaks down the protein and fat surrounding it in addition to enzymes and bacteria from the milk generally assisting in the breakdown of that lactose. That's why you get these weird results like, "Asians all lack lactase persistence but are known for drinking milk all the way back into the ancient past." The reason it's becoming a problem today is that the milk everyone is drinking is more heavily processed (ultra pasteurization, more thorough homogenization, etc) and that makes the milk require lactase persistence to digest because it's releasing so much lactose into your gut at one time and nothing is assisting the digestion but your own lactase.
