    Anyone got any recommendations to improve bread quality? I’m already running with:
    >500g flour
    >380ml warm water
    >1tsp salt
    >1tsp yeast

    Rising for 4 hours to overnight. Baking at 450 on cornmeal. However I want to make it more rustic, textured, or flavoured

      Start making sourdough. It's kind of a hassle which is why I don't do it anymore, but if you're a NEET you can handle it. Otherwise, bake in a cast iron skillet or Dutch oven for texture. Bonus points if you put a little pan full of water into the oven alongside it; the steam will make your bread more crusty.

      For better flavor, my favorite thing is roasted sesame seeds. Make sure you get the roasted ones or they'll be so subtle you can barely taste them (like a hamburger bun). Go to an Asian store to buy them because if you find them at a regular grocery they'll charge you out the ass. Adds a slight nuttiness. Just throw a handful on after you paint on your egg white or milk and before you throw it into the oven.

    Bread is not off-limits in a general low-carb diet. You just can't have too much of it. I'm fine with having a restricted intake of bread. I want to avoid all that highly processed garbage.

    Bread is overrated. I've been eating a carnivore-ish diet for almost 2 years, and every time I try some high-quality sourdough, it does absolutely nothing for me. It doesn't taste particularly appealing and it doesn't give me energy. If anything, it saps my energy compared to my usual diet. Fruit, meat, raw dairy, and honey are just better in every way.

    it's difficult to find a flour without any added iron here, i know whole wheat flours aren't fortified with iron but man i still have trouble kneading them

    Even when you're on zero or low carb, refeed with non-goyslop made bread is good.

    I feel bad for myself because I made great homemade bread in a cast iron Dutch oven. What little bread can manage on a cut is usually reserved for pizza or burgers on Friday. I was literally fantasizing about having a tuna sub earlier.

      i am basically cutting on wheat but i'll need to give it up at the end because bloating. keep garlic bread in fridge to increase resistant starch. white kidney bean extract on bulksupplements. biggest thing that'll save you is strict OMAD though

        Tried it before lost too much muscle. I do not retain muscle well on IF/omad well if it's longer than a week. I do in the in mid body fat ranges like 15-18% but I absolutely wither on omad below there. I think once the metabolic availability of body fat starts to go down you have to tweak for more regular protein consumption.

            I've tried it on multiple occasions in diffent bodyfat ranges. This was really early into it being a meme like 2014ish. I don't hate it or think it's useless I just got better at recognizing where it's not useful. But yeah most of diet advice and fasting advocacy is only really applicable to the obese and overweight category but they try to pass it off as some cure-all that will work for everyone as if they have anything in common with someone who's never been over 18% body fat lifts 3 days a week and does endurance sports.

    Bread makes my shits awful, I swell, look unhealthy and gain the equivalent of 5-10% bodyfat overnight. I am a porridge and potato man now, which is a shame as I am a man of simple tastes so simple good bread + butter . At least my body rebelling against neolithic farmcel food is a larp I can enjoy.
