I think we should genetically engineer a subrace of female humans to produce milk instead of relying on cows. The most obvious benefits is that human will be able to digest human milk far better than cows milk, making it a more efficient way to absorb all of the nutrients. These genetically engineered "cow girls" could also be fed a totally normal human diet rather than requiring valuable agricultural land to be wasted to grow animal feed that humans cannot consume.
They should mature quicker than normal human women and their breasts should grow to triple the ordinary size to maximize production. Since they'll be kept purely for their milk, it would make the most sense to alter their cognitive levels to that of the average farm animal. Keeping them as intelligent, functioning humans would be cruel. Above all, it is most important to keep their genetics as close to regular, intelligent humans as possible so they can reproduce with ordinary human male sperm. I think that would solve a lot of issues.
