          Fiber is not an essential nutrient. Vitamin K2 is found only in animal foods (with the exception of natto, which most vegans aren't eating). Not only is K2 an essential nutrients that most vegans aren't getting; it can also be converted into K1 but your gut flora, precluding the need to consume green veggies. And K2 isn't even included as part of "Vitamin K" on Cronometer. Not to mention bioavailability of nutrients. You aren't absorbing half the nutrients in plants because they're either wrapped up in fiber or they come with enzyme inhibitors that disable and damage your digestive system. Then there's B12, of course. You can't get it from plants, and many people can't absorb the supplements, which leads to irreversible neurological damage. Vegans inevitably become malnourished because we aren't herbivores.
