You're better off on the elliptical if you want to do long sessions multiple times a week. Save yourself the joint issues and easier to alleviate boredom which will be a harder enemy than exhaustion.
Find a precor elliptical machine and start with 6 incline 5 tread. You can do that for 30 mins 5x per week as a start and that is the absolute max that is sustainable for you right now. And don't expect dramatic weight loss. Maybe 2 lbs in a month if you don't change your eating habits.
it's good cardio and will work your calves pretty well. honestly if you are 250 any amount of exercise will be a massive step up for you. I sometimes bring my hunting pack to my work gym and put some weights in it and use the treadmill on max incline and walk a bit to train for back country hunts.
I’m just worried about fricking up my legs but sometimes I don’t feel like I’m getting a sweat from the elliptical but I’ll consider that as well.

Incline walking is actually shown to REDUCE joint strain. It is easier on your body than regular and decline walking.
>alleviate boredom which will be a harder enemy than exhaustion
I can't think of anything more boring than an elliptical machine. Incline walking will at least let me throw on a video to pass the time with

It’s pretty difficult to do this without holding onto the rails. Better off doing 10% 3.0 for 30 minutes
If don't hold onto the machine then yes but if people actually did that they would realize it's an actual workout and not a casual stroll and scroll
