    It's a bit pricey and high in sodium, that's about it. Goes nice with some olives and cheeses

    Some curing salts can be mildly carcinogenic, but meats like Serrano/Palma ham etc shouldn't be if it was traditionally made. So I guess watch you don't get scammed

    Cure meats are high in sodium and nitrates which make them carcinogenic. Processed foods but especially meats should be avoided or minimized intake.

        Sure but those are not the same kind of nitrates. When you eat nitrates they turn into nitrites which are what cause cancer and they form during the curing process or during digestion of cured meats, all the huge amount of sodium isn't good either.

          the only cancer risk is colorectal which was low anyway and vastly mitigated by everything else (no smoking, exercising, not being fat)

            You understand that the curing process does chemical changes to the nitrates right. If you eat too much charred meat that's also carcinogenic.
