    to simulate, do what they do: a lot of walking, not being obese fat fricks, quality food
    my gramps almost was a centenarian, 99y/o, was mentally fine but age took its toll physically, he could still walk (albeit slow) and was able to stand up by himself from bed till the day he died peacefully in his sleep

    Carbs? Well, more like

    Moderate yet constant activity
    Some wine at lunch and dinner
    Strong family bonds
    Genetics
    Work to live, not the other way round
    Don't care too much about stuff beyond your control
    That's it

    About carbs: sure they should play an important role in your diet (let's say no less than 33%)
    Anyway the more you switch away from a rural lifestyle the more you ditch carbs. It has to be noted that I believe our portions are 1/3 of the burger ones anyway. Even pizza and pasta. Our median CICO is probably more equilibrated than the burger one.
    I had i.e. salad each day at least once a day since I was a kid. Broccoli, cauliflower, carrots at least once every two/three days and a lot of seasonal fruits and veggies. A varied (often seasonal) diet plays a certain role in gut health and longevity.
    Red meat occurs no more than twice a month (maybe even less than that: when we opt for it, it has to be top notch quality. Quality > quantity)
    Poultry and fish occured every other day before I entered my IST phas (I've upped my poultry game now)

      Its not in every dish.
      The real secret is home cooked meals. I noticed nearly every person I know likes to order out, eat at restaurants, or just pick up fast food for every dinner.

        Fat Americans cook at home, too. Young city-dwelling singles eat out a lot for sure, but they also tend to be slimmer and more fit.

        No the most likely culprits are the lazy and gluttonous cultural mindsets leading to sedentary lifestyles, large portions and compulsive snacking on processed junk between meals (the biggest issue no one has mentioned yet).
