if you are cutting, steady state cardio will deplete sugar stores then begin the process of ketosis if you are not in it already
HIIT will do the same thing but over a long period of time routinely requires greater energy availability, so if you keep a long daily HIIT streak, youll be digging right into fat stores. fat has more energy density than carbs/sugars.

If you should cut your calories from fat or carbs depends on how much you excercise. If you immediately plan to burn all the calories you eat, it's better to eat carbs since you can't really hold very high intensity by ketones alone and carbs are what your metabolism priorizises. If you don't do anything physical you better of eating just fat and protein since they keep you satisfied for longer, and carbs need instant processing and if you don't burn them they get stored as fat. Of course the same goes for fat but metabolizing that is much a slower of a process so you won't get those spikes of high blood sugar and hunger.

It's 99% lipids which is why in fasted cardio you burn muscle first, because in that ketogenic state your body will break apart lysine and leucine from muscle tissue for energy.
